Vegetarian Pizza Video

Heart Healthy Recipe Diabetes Recipe
This delicious vegetarian pizza substitutes hummus for cheese to keep it low in fat but high in flavor. This recipe is perfect for a meal, appetizer or after school snack.

Ingredients

    • 1 12-inch store-bought pizza crust
    • Olive-oil-flavored cooking spray
    • 1 cup sliced zucchini
    • 1 cup sliced yellow squash
    • 1/2 cup sliced red onion
    • 1/4 cup roasted red pepper, chopped
    • 1 cup sliced mushrooms
    • 1 garlic clove, minced
    • Oregano to taste
    • Black pepper to taste
    • 5 Tbsp original flavor hummus original

Preparation

    • Lightly coat pizza crust with olive-oil-flavored cooking spray and heat in oven according to package directions.
    • In a skillet, sauté zucchini, yellow squash, red onion, roasted red pepper, mushrooms and garlic over medium heat about 4 minutes, or until onion is softened. Add oregano and black pepper to taste.
    • Remove pizza crust from oven and spread with hummus. Spread vegetables over top evenly. Heat for 1 additional minute. Serve immediately.
