Low Fat Blueberry Muffins Recipe

Heart Healthy Recipe
Everyone loves blueberry muffins. These have half the fat and calories of store-bought reduced fat muffins and are an easy breakfast recipe that's good for your family.

Ingredients

    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 3 tsp baking powder
    • 1/4 tsp salt
    • 1 1/2 cups fresh or frozen blueberries
    • 2 eggs
    • 1/2 cup 2% milk
    • 1/2 cup applesauce
    • 3 Tbsp vegetable oil

Preparation

    • Preheat oven to 350°. Line a muffin tin with baking cups.
    • In a large bowl, mix flour, sugar, baking powder and salt. Add blueberries.
    • In a small bowl, beat eggs, milk, applesauce and oil. With a rubber spatula, fold egg mixture into flour mixture until moist. Do not over mix.
    • Pour batter evenly among cups. (For rounded tops, leave cups 1/2 full. For flat tops, fill 3/4 full.)
    • Bake until golden, about 25 minutes.
