Stuffed Mushrooms Recipe

These low calorie, bite sized appetizers will get your party off to a great start. Prepare the stuffing up to a day in advance, and assemble the mushroom caps shortly before your party.

Ingredients

    • 12 large fresh mushrooms
    • 1 Tbsp reduced calorie trans fat free margarine
    • 2 Tbsp chopped green onion
    • 2 Tbsp chopped green pepper
    • 1 slice light whole wheat bread, toasted and cubed
    • 1/4 tsp onion powder
    • 1/4 tsp garlic powder
    • 1/8 tsp black pepper
    • 1/8 tsp dried thyme
    • 1/8 tsp paprika
    • 2 Tbsp grated Parmesan cheese

Preparation

    • Preheat oven to 425°. Lightly coat 2 baking sheets with nonstick cooking spray.
    • Wash mushrooms thoroughly. Remove stems from mushrooms, and set caps aside. Finely chop stems to measure 1/2 cup.
    • In a skillet, melt margarine over medium heat. Add the mushroom stems, onions and bell pepper and saute until the vegetables are tender and mushroom liquid has evaporated. Add toast cubes, onion powder, garlic powder, black pepper, thyme and paprika and mix well. Stuff mixture into mushroom caps and place them on prepared baking sheets. Bake uncovered for 10 minutes, or until heated through.
    • Sprinkle with Parmesan cheese. Serve warm.
