Italian Chicken Marengo Recipe

Looking for an easy chicken dinner? This savory Italian dish takes less than 45 minutes to prepare and uses just one pot. Each serving's just 215 calories and has loads of protein.

Ingredients

    • 6 boneless skinless chicken breasts (4 oz each)
    • 1 Tbsp garlic, minced
    • 1/2 tsp marjoram
    • 1/2 tsp thyme
    • 1/2 tsp freshly ground black pepper
    • 1 can diced tomatoes
    • 1/2 cup dry white wine (or low sodium chicken broth)
    • 1 medium onion, sliced
    • 1 cup barley
    • 1/4 cup green olives, sliced

Preparation

    • Rub chicken breasts with seasonings and set aside.
    • Drain tomatoes, reserving liquid. Combine tomato liquid and white wine in a large pot and bring to a boil. Add onion and barley to pot and stir.
    • Arrange chicken over barley, and spread diced tomatoes over chicken. Cover and simmer for 20 to 30 minutes.
    • Remove from heat and let stand (covered) until all liquid is absorbed, about 5 minutes. Sprinkle with sliced olives. Serve warm.
